- Heat the oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
- Pat the haddock fillets very dry with paper towels and arrange them in a single layer in the prepared dish.
- Whisk together melted butter, lemon juice, minced garlic, paprika, Italian seasoning, kosher salt, and black pepper. Spoon or brush the mixture evenly over the fillets.
- Mix the panko or breadcrumbs with Parmesan, if using, and sprinkle the mixture over the fish. Drizzle the crumbs lightly with additional butter or olive oil if they look dry.
- Bake for 12–18 minutes, depending on the thickness of the fillets. Begin checking thinner pieces at 12 minutes.
- Remove the haddock when it flakes easily and the thickest part registers 145°F (63°C) on an instant-read thermometer. Garnish with parsley and serve with lemon wedges.
Notes
Haddock is lean, so avoid baking it past doneness. For a darker crumb topping, broil the baked fish for 1–2 minutes while watching carefully. Store leftovers refrigerated in an airtight container and reheat gently until warmed through.
