- Heat the oven to 375°F (190°C) and lightly grease a baking dish or rimmed sheet pan with the neutral oil.
- Whisk the soy sauce, honey, freshly grated ginger, minced garlic, sesame oil, rice vinegar or lime juice, and black pepper in a bowl until combined.
- Place the chicken thighs in the prepared dish and coat them with the marinade. Cover and refrigerate for at least 30 minutes, or marinate for up to 8 hours for deeper flavor.
- Arrange the chicken skin-side up and bake uncovered for 35–45 minutes. Check the thickest part with an instant-read thermometer; it must reach at least 165°F (74°C), although larger bone-in thighs are often especially tender around 175°F (80°C).
- Let the chicken rest for 5 minutes before serving. Spoon the pan juices over the thighs and finish with sliced scallions and optional sesame seeds.
Notes
For better browning, pat the chicken dry before marinating and broil for 1–2 minutes at the end while watching closely because the honey can burn. If making a sauce from marinade that touched raw chicken, boil it vigorously for several minutes before serving; never serve it unboiled.
