- Heat the oven to 375°F and grease a 2-quart baking dish.
- Steam or boil the cauliflower florets for 5–7 minutes, until just tender. Drain very well and pat dry.
- Beat the softened cream cheese, sour cream, melted butter, garlic powder, salt, and black pepper together in a bowl.
- Stir in 1/2 cup of the shredded cheddar and all of the Parmesan cheese.
- Fold the dry cauliflower into the cheese mixture. Stir in the crumbled bacon if using.
- Transfer the mixture to the greased baking dish. Sprinkle the remaining 1/2 cup cheddar over the top and add the seasoned breadcrumbs if desired.
- Bake uncovered for 20–25 minutes, until hot, bubbling, and lightly browned. Rest for 5 minutes before serving.
Notes
Drain cauliflower thoroughly so the sauce stays thick and creamy. Freshly shredded cheese melts most smoothly. For a lower-carbohydrate casserole, omit the breadcrumbs. Frozen cauliflower may be used if thawed completely and drained or squeezed dry first.
