Easy Baked Cauliflower Casserole

Ingredients
  

Cauliflower
  • 1 large head, about 2 pounds Cauliflower florets
Creamy Cheese Sauce
  • 4 ounces Cream cheese, softened
  • 1/2 cup Sour cream
  • 1 cup Sharp cheddar cheese, shredded, divided
  • 1/4 cup Parmesan cheese, grated
  • 2 tablespoons Butter, melted
Seasoning
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Optional Toppings
  • 1/4 cup Seasoned breadcrumbs
  • 4 slices Cooked bacon, crumbled

Method
 

Step-by-Step
  1. Heat the oven to 375°F and grease a 2-quart baking dish.
  2. Steam or boil the cauliflower florets for 5–7 minutes, until just tender. Drain very well and pat dry.
  3. Beat the softened cream cheese, sour cream, melted butter, garlic powder, salt, and black pepper together in a bowl.
  4. Stir in 1/2 cup of the shredded cheddar and all of the Parmesan cheese.
  5. Fold the dry cauliflower into the cheese mixture. Stir in the crumbled bacon if using.
  6. Transfer the mixture to the greased baking dish. Sprinkle the remaining 1/2 cup cheddar over the top and add the seasoned breadcrumbs if desired.
  7. Bake uncovered for 20–25 minutes, until hot, bubbling, and lightly browned. Rest for 5 minutes before serving.

Notes

Drain cauliflower thoroughly so the sauce stays thick and creamy. Freshly shredded cheese melts most smoothly. For a lower-carbohydrate casserole, omit the breadcrumbs. Frozen cauliflower may be used if thawed completely and drained or squeezed dry first.
