- Heat the oven to 350°F (175°C) and lightly grease an 8-inch square baking dish.
- Combine the rolled oats, baking powder, cinnamon, and salt in a mixing bowl.
- In a second bowl, whisk the milk, applesauce, egg, melted butter or coconut oil, sweetener, and vanilla until blended.
- Pour the wet mixture into the oat mixture and stir until evenly combined. Fold in the diced apple and optional nuts or dried fruit.
- Transfer the mixture to the prepared baking dish and spread it into an even layer.
- Bake for 35–40 minutes, until the center is set and the top is lightly browned.
- Let the baked oatmeal rest for 5–10 minutes before serving warm with milk, yogurt, apples, nuts, or maple syrup.
Notes
Use old-fashioned rolled oats for the best soft, chewy texture. Choose a firm apple such as Honeycrisp, Fuji, Pink Lady, or Granny Smith, and avoid overbaking so the center stays moist.
