Step-by-Step
  1. Heat the oven to 350°F (175°C) and lightly grease an 8-inch square baking dish.
  2. Combine the rolled oats, baking powder, cinnamon, and salt in a mixing bowl.
  3. In a second bowl, whisk the milk, applesauce, egg, melted butter or coconut oil, sweetener, and vanilla until blended.
  4. Pour the wet mixture into the oat mixture and stir until evenly combined. Fold in the diced apple and optional nuts or dried fruit.
  5. Transfer the mixture to the prepared baking dish and spread it into an even layer.
  6. Bake for 35–40 minutes, until the center is set and the top is lightly browned.

Notes

Use old-fashioned rolled oats for the best soft, chewy texture. Choose a firm apple such as Honeycrisp, Fuji, Pink Lady, or Granny Smith, and avoid overbaking so the center stays moist.
