- Heat the oven to 375°F. Line a rimmed baking sheet with foil, place a wire rack on top if available, and lightly coat the rack with nonstick cooking spray.
- In a small bowl, stir together the brown sugar, smoked paprika, garlic powder, cayenne pepper if using, kosher salt, and black pepper.
- Wrap each chicken cube with one piece of bacon and secure the bacon with a wooden toothpick. Roll each wrapped piece in the seasoning mixture or sprinkle the mixture over all sides.
- Arrange the bites seam-side down on the prepared rack, leaving space between each piece so the heat can circulate and the bacon fat can drain.
- Bake for 20 to 25 minutes, turning once if needed, until the chicken reaches at least 165°F in the thickest piece and the bacon is browned.
- For crispier bacon, broil the bites for 1 to 3 minutes at the end, watching closely. Let them rest for a few minutes before serving.
Notes
Use an instant-read thermometer rather than bacon color alone to check doneness. A wire rack helps the bacon brown more evenly. Refrigerate leftovers promptly and reheat in a 375°F oven or air fryer until hot.
