Easy Bacon Mac and Cheese Bites

Creamy baked macaroni and cheese is combined with crisp bacon and egg, packed into muffin cups, and baked into golden, bite-size appetizers. Optional panko breadcrumbs add a delicious crunchy finish.

Ingredients
  

Pasta and Bacon
  • 8 ounces Elbow macaroni
  • 6 slices Bacon, cooked crisp and crumbled
  • 1 tablespoon Reserved bacon fat, optional
Cheese Sauce
  • 2 tablespoons Unsalted butter
  • 2 tablespoons All-purpose flour
  • 1 1/2 cups Whole milk
  • 1 cup Shredded sharp cheddar cheese
  • 1/2 cup Shredded Monterey Jack or mozzarella cheese
  • 1/4 cup Grated Parmesan cheese
Seasoning and Binding
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper
  • 1 large Large egg, lightly beaten
Topping
  • 1/3 cup Plain panko breadcrumbs, optional
  • As needed Cooking spray or butter for the muffin tin

Method
 

Step-by-Step
  1. Heat the oven to 375°F and grease a 24-cup mini-muffin pan or a 12-cup standard muffin pan with cooking spray or butter.
  2. Cook the elbow macaroni in salted water until just under al dente, usually about 1 minute less than the package directions. Drain it very well so excess water does not thin the cheese sauce.
  3. Cook the bacon until crisp, drain it, and crumble it into small pieces. Reserve 1 tablespoon of bacon fat if desired for extra smoky flavor.
  4. Melt the unsalted butter in a saucepan over medium heat. Whisk in the flour and cook for about 1 minute to make a smooth roux.
  5. Gradually whisk in the whole milk. Cook for 3–5 minutes, stirring often, until the sauce is slightly thickened.
  6. Remove the saucepan from the heat and stir in the cheddar, Monterey Jack or mozzarella, Parmesan, kosher salt, and black pepper until smooth.
  7. Combine the cheese sauce with the drained macaroni and let the mixture cool for about 5 minutes. Stir in the lightly beaten egg and most of the crumbled bacon only after the mixture has cooled slightly.
  8. Spoon the macaroni mixture firmly into the prepared muffin cups, dividing it evenly. Pressing the mixture down helps the bites hold together after baking.
  9. Sprinkle the reserved bacon over the tops and add the plain panko breadcrumbs if using. The panko creates a light, crisp contrast against the creamy pasta.
  10. Bake for 18–22 minutes, or until the tops are golden and the bites feel set. Cool them in the pan for 5–10 minutes, then run a thin knife around the edges if necessary before removing.

Notes

Cook the pasta slightly under al dente and cool the cheese-and-pasta mixture briefly before adding the egg. For especially firm bites in a 12-cup standard muffin pan, some versions use 2 large eggs, but this recipe is written with 1 large egg. Store leftovers covered in the refrigerator and reheat gently in the oven or toaster oven.
