  • 8 large Large eggs
  • 1/4 cup Whole milk or half-and-half
  • 6 slices Bacon, cooked until crisp and chopped
  • 1/2 cup Shredded cheddar cheese

Seasonings
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Grease all 12 muffin cups generously with cooking spray or softened butter, making sure to coat the sides as well as the bottoms.
  2. Cook the bacon in a skillet until crisp. Drain it on paper towels, then chop or crumble it into small pieces.
  3. Whisk the eggs, milk or half-and-half, kosher salt, and black pepper in a bowl until the mixture is evenly combined.
  4. Divide the chopped bacon, shredded cheddar, and optional green onion or chives among the prepared muffin cups.
  5. Pour the egg mixture into the cups, filling each one about two-thirds to three-quarters full. Leave room at the top because the eggs puff as they bake.
  6. Bake for 18–22 minutes, or until the centers are set and no longer look wet. Let the bites rest for 5 minutes before removing them from the pan.

Notes

Grease the muffin pan generously or use silicone liners because baked egg mixtures can stick around the edges. If needed, run a thin knife around each bite before lifting it out. Refrigerate cooled bites in an airtight container for up to 4 days and reheat each one in the microwave for about 20–30 seconds.
