Easy Bacon Cheddar Bread

  • 8 slices Bacon, cooked crisp, drained, cooled slightly, and chopped
  • 3 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 1 teaspoon Fine salt
  • 1/2 teaspoon Black pepper
  • 1/4 teaspoon Garlic powder, optional
  • 1 1/2 cups Sharp cheddar cheese, shredded
  • 2 Large eggs
  • 1 1/2 cups Whole milk
  • 1/3 cup Neutral vegetable oil or melted butter
Optional Flavor
  • 1 tablespoon Chopped chives or green onion

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Grease a 9 x 5-inch loaf pan and line it with parchment if desired.
  2. Cook the bacon until crisp, drain it well, cool slightly, and chop it. Reserve about 2 tablespoons for sprinkling over the loaf.
  3. Whisk the flour, baking powder, salt, black pepper, and optional garlic powder in a large bowl. Stir in the shredded cheddar and most of the chopped bacon.
  4. In a separate bowl, whisk the eggs, whole milk, and neutral oil or melted butter until combined.
  5. Add the wet ingredients to the dry ingredients and stir just until no large streaks of dry flour remain. Do not overmix.
  6. Transfer the batter to the prepared loaf pan. Sprinkle the reserved bacon and a little extra cheddar over the top if desired.
  7. Bake for 50–60 minutes, until the top is golden and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Cool the loaf in the pan for 10–15 minutes, then remove it and continue cooling on a rack before slicing.

Notes

Drain and cool the bacon thoroughly so excess grease does not make the loaf heavy and warm bacon does not melt the cheese prematurely. Store cooled bread covered in the refrigerator and reheat slices gently before serving.
