- Preheat the oven to 350°F (175°C). Grease a 12-cup muffin pan very well or fit it with silicone liners.
- Cook the bacon until crisp, transfer it to a paper towel-lined plate, and crumble it once cool enough to handle.
- Steam or blanch the broccoli until just tender. Chop it finely and pat it thoroughly dry to remove excess moisture.
- Whisk the eggs, milk or half-and-half, kosher salt, and black pepper in a bowl until the mixture is evenly combined.
- Divide the chopped broccoli, crumbled bacon, and shredded cheddar evenly among the prepared muffin cups.
- Pour the egg mixture over the fillings, filling each cup about three-quarters full.
- Bake for 18–22 minutes, until the centers are set and the tops are lightly puffed.
- Let the egg bites rest for 5 minutes before removing them from the pan. They will deflate slightly as they cool, which is normal.
Notes
Dry the broccoli thoroughly so the egg bites do not become watery. Do not overbake; remove them as soon as the centers are just set to keep the texture tender. Thawed frozen broccoli may be used if it is squeezed completely dry.
