- Heat the oven to 425°F (220°C). Place a pizza stone or heavy baking sheet in the oven while it heats, if available.
- Toss the thinly sliced apples with lemon juice, granulated sugar, cinnamon, and flour or cornstarch. Let the mixture stand for about 5 minutes.
- Combine the flour, brown sugar, oats, cinnamon, and salt for the streusel. Cut in the cold butter until coarse crumbs form.
- Stretch or roll the pizza dough into a 12-14-inch round. Set it on parchment paper or a lightly greased pizza pan.
- Brush the dough lightly with olive oil or melted butter, leaving a small border around the edge.
- Arrange the apples in a slightly overlapping layer and sprinkle the streusel evenly over them.
- Bake for 15-20 minutes, until the crust is golden and the apples are tender. Rotate the pan halfway through if the oven browns unevenly.
- Cool the pizza for 5-10 minutes. If desired, whisk the confectioners’ sugar, milk or cream, and vanilla into a glaze, drizzle it over the pizza, and slice into eight pieces.
Notes
Use firm baking apples and slice them about ⅛ inch thick for even cooking. For a crisper base, bake parchment and dough directly on a preheated baking sheet or pizza stone. Refrigerate leftovers and gently reheat before serving.
