Easy Apple Pie Yogurt Parfait

A no-bake layered dessert made with cinnamon-spiced apples, creamy Greek yogurt, and crunchy granola. This simple recipe makes four individual parfaits in about 25 minutes.

Cinnamon Apple Filling
  • 4 medium Medium apples, peeled, cored, and diced small
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Packed light brown sugar
  • 1 teaspoon Ground cinnamon
  • 1/4 teaspoon Ground nutmeg, optional
  • 1 tablespoon Water
Layers
  • 2 cups Vanilla Greek yogurt
  • 1 cup Granola
  • 1/4 cup Chopped pecans or walnuts, optional
  • 1/2 teaspoon Vanilla extract, optional if using plain yogurt

Method
 

Step-by-Step
  1. Melt the butter in a medium skillet over medium heat. Add the diced apples, brown sugar, cinnamon, optional nutmeg, and water, then stir until the apples are evenly coated.
  2. Cook the apple mixture for 8–12 minutes, stirring occasionally. Stop when the apples are tender but still hold their shape rather than turning into applesauce.
  3. Remove the skillet from the heat and cool the apples to lukewarm or room temperature. This keeps the yogurt thick when the parfaits are assembled.
  4. If using plain Greek yogurt, stir in the vanilla extract before layering. Vanilla Greek yogurt can be used directly from the container without any modification.
  5. Spoon a small layer of yogurt into each of four glasses. Add a layer of cinnamon apples, followed by granola, keeping the layers distinct for a pretty presentation.
  6. Repeat the layers, finishing each parfait with yogurt, apples, granola, and optional chopped pecans or walnuts. Serve right away for the crunchiest granola, or refrigerate for up to about 2 hours.

Notes

Cool the cooked apples before assembly so the yogurt does not become thin or watery. Keep granola separate for meal-prep parfaits and add it just before serving. For a no-cook shortcut, mix approximately 1 cup unsweetened or lightly sweetened applesauce with 1/2 teaspoon cinnamon and assemble the parfaits in about 10 minutes.
