- Melt the butter in a medium skillet over medium heat. Add the diced apples, brown sugar, cinnamon, optional nutmeg, and water, then stir until the apples are evenly coated.
- Cook the apple mixture for 8–12 minutes, stirring occasionally. Stop when the apples are tender but still hold their shape rather than turning into applesauce.
- Remove the skillet from the heat and cool the apples to lukewarm or room temperature. This keeps the yogurt thick when the parfaits are assembled.
- If using plain Greek yogurt, stir in the vanilla extract before layering. Vanilla Greek yogurt can be used directly from the container without any modification.
- Spoon a small layer of yogurt into each of four glasses. Add a layer of cinnamon apples, followed by granola, keeping the layers distinct for a pretty presentation.
- Repeat the layers, finishing each parfait with yogurt, apples, granola, and optional chopped pecans or walnuts. Serve right away for the crunchiest granola, or refrigerate for up to about 2 hours.
Notes
Cool the cooked apples before assembly so the yogurt does not become thin or watery. Keep granola separate for meal-prep parfaits and add it just before serving. For a no-cook shortcut, mix approximately 1 cup unsweetened or lightly sweetened applesauce with 1/2 teaspoon cinnamon and assemble the parfaits in about 10 minutes.
