Step-by-Step
- Heat the oven to 350°F (175°C) and line two standard 12-cup muffin pans with paper liners.
- Chop the apple pieces in the canned pie filling into smaller pieces, then stir in 1 teaspoon ground cinnamon.
- Combine the cake mix, eggs, vegetable oil, and water. Beat just until the batter is smooth, taking care not to overmix.
- Fill each liner about one-third full with batter. Add a spoonful of apple pie filling, cover with more batter, and keep each liner no more than two-thirds full.
- Bake for 18–22 minutes, until the tops spring back lightly and a toothpick inserted into the cake portion comes out clean. Test more than one spot because the toothpick may touch the apple filling.
- Cool the cupcakes in the pans for 5 minutes, then transfer them to a wire rack. Allow them to cool completely before frosting.
- Frost the cooled cupcakes with vanilla frosting, drizzle with caramel sauce, and sprinkle with additional cinnamon if desired.
Notes
Chop the apple filling finely for easier portioning and a more even crumb. Cool cupcakes completely before decorating so the frosting stays in place. Store covered at room temperature for a short period or refrigerate if needed, and let refrigerated cupcakes come closer to room temperature before serving.
