  • 1 15.25-ounce box Spice cake mix or yellow cake mix
  • 3 eggs Large eggs
  • 1/2 cup Vegetable oil
  • 1/2 cup Water
  • 1 21-ounce can Apple pie filling
  • 1 teaspoon Ground cinnamon
Topping
  • 1 16-ounce container Prepared vanilla frosting
  • 1/2 cup Caramel sauce
  • 1/4 teaspoon Additional cinnamon, optional

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C) and line two standard 12-cup muffin pans with paper liners.
  2. Chop the apple pieces in the canned pie filling into smaller pieces, then stir in 1 teaspoon ground cinnamon.
  3. Combine the cake mix, eggs, vegetable oil, and water. Beat just until the batter is smooth, taking care not to overmix.
  4. Fill each liner about one-third full with batter. Add a spoonful of apple pie filling, cover with more batter, and keep each liner no more than two-thirds full.
  5. Bake for 18–22 minutes, until the tops spring back lightly and a toothpick inserted into the cake portion comes out clean. Test more than one spot because the toothpick may touch the apple filling.
  6. Cool the cupcakes in the pans for 5 minutes, then transfer them to a wire rack. Allow them to cool completely before frosting.
  7. Frost the cooled cupcakes with vanilla frosting, drizzle with caramel sauce, and sprinkle with additional cinnamon if desired.

Notes

Chop the apple filling finely for easier portioning and a more even crumb. Cool cupcakes completely before decorating so the frosting stays in place. Store covered at room temperature for a short period or refrigerate if needed, and let refrigerated cupcakes come closer to room temperature before serving.
