Ingredients
  

Fritter Batter
  • 1 1/2 cups All-purpose flour
  • 1/3 cup Granulated sugar
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Fine salt
  • 1 teaspoon Ground cinnamon
  • 1/4 teaspoon Ground nutmeg, optional
  • 2 Large eggs
  • 1/3 cup Milk
  • 1 teaspoon Vanilla extract
  • 2 about 2 cups Medium apples, peeled, cored, and finely diced
For Frying
  • Enough for 2-3 inches in the pan Neutral frying oil, such as vegetable, canola, or peanut oil
Vanilla Glaze
  • 1 cup Powdered sugar
  • 2 tablespoons, plus more if needed Milk
  • 1/2 teaspoon Vanilla extract

Method
 

Step-by-Step
  1. Whisk the flour, sugar, baking powder, salt, cinnamon, and optional nutmeg in a large bowl. In a separate bowl, whisk the eggs, milk, and vanilla until evenly combined, then add the wet mixture to the dry ingredients and stir just until a thick batter forms.
  2. Fold the small diced apple pieces into the batter with a spatula. Stop mixing as soon as the apples are distributed so the fritters remain tender rather than dense.
  3. Pour 2 to 3 inches of neutral oil into a deep, heavy pan and heat it to 350°F. Drop heaping tablespoons or small scoops of batter into the oil, leaving room between fritters, and fry for about 2 to 3 minutes per side, turning once or twice, until deeply golden and cooked through.
  4. Transfer the cooked fritters to a wire rack set over a tray, or to a paper-towel-lined rack. Allow the oil to return to about 350°F between batches for consistent color and crispness.
  5. Whisk the powdered sugar, milk, and vanilla into a smooth glaze. Drizzle it over warm fritters or dip their tops into the glaze, then serve once the coating has lightly set.

Notes

Use a thermometer to maintain the oil near 350°F. Keep the batter thick, dice the apples small, avoid overmixing, and drain the fritters on a wire rack when possible. Glaze while warm but not piping hot.
