- Simmer 1 cup apple cider in a small saucepan until approximately 1/2 cup remains. Cool completely before using.
- Heat the oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners.
- Whisk the flour, baking powder, baking soda, salt, cinnamon, and nutmeg together in a medium bowl.
- Beat the softened butter and brown sugar for 2–3 minutes, until lighter and fluffy. Add the eggs one at a time, then mix in the vanilla.
- Add the dry ingredients in two or three additions, alternating with the cooled cider. Mix only until combined.
- Divide the batter among the liners, filling each about two-thirds full. Bake for 18–22 minutes, until the tops spring back and a toothpick comes out clean or with a few moist crumbs.
- Cool the cupcakes in the pan for about 5 minutes, then transfer them to a rack and cool completely.
- Beat the cream cheese and butter until smooth. Gradually add the confectioners’ sugar, then mix in vanilla, cinnamon, and salt until creamy and spreadable.
- Pipe or spread the frosting over the fully cooled cupcakes.
- Finish with cinnamon sugar, thin apple slices, or a light caramel drizzle, if desired.
Notes
Use brick-style cream cheese rather than tub-style spread for a firmer frosting. Chill the frosting for 15–20 minutes if it is too soft for piping. Store frosted cupcakes covered in the refrigerator and let them sit briefly at room temperature before serving.
