Topping
  • 1/3 cup Ketchup
  • 2 tablespoons Packed brown sugar
  • 2 tablespoons Prepared yellow mustard

  1. Heat the oven to 350°F (175°C). Lightly grease a loaf pan or line a rimmed baking sheet with foil.
  2. In a large bowl, combine the ground beef, egg, finely chopped onion, milk, dry breadcrumbs, salt, and ground black pepper.
  3. Mix gently just until the ingredients are evenly combined. Avoid compressing or overworking the meat.
  4. Shape the mixture into a loaf and place it in the prepared pan or on the foil-lined baking sheet.
  5. Stir together the ketchup, packed brown sugar, and prepared yellow mustard. Spread the topping over the top of the loaf.
  6. Bake for about 60 minutes, or until the center reaches 160°F (71°C).
  7. Let the meatloaf rest for 10 minutes before slicing so the juices redistribute and the slices hold together.

Notes

Use 80-85% lean ground beef for a moist texture. Mix gently, avoid overworking the meat, and rest the baked loaf for 10 minutes before cutting.
