Easy and Refreshing Mango Slaw Recipe

A crisp, colorful cabbage slaw with sweet mango, fresh cilantro, lime juice, and a lightly sweet, gently spiced dressing. It is a no-cook side dish ready in about 15 to 20 minutes.

Ingredients
  

Slaw
  • 4 cups Finely shredded green cabbage, or 1 bag coleslaw mix
  • 1 cup Finely shredded red cabbage
  • 1 large Large ripe but firm mango, peeled and cut into matchsticks
  • 1/4 cup Thinly sliced red onion
  • 1/4 cup Chopped fresh cilantro
  • 1 small, optional Small jalapeno, seeded and finely chopped
Lime Dressing
  • 1/4 cup, about 2 limes Fresh lime juice
  • 2 tablespoons Olive oil or another mild oil
  • 1 tablespoon Honey
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Ground cumin
  • 1/8 teaspoon, optional Cayenne pepper
  • To taste Freshly ground black pepper

Method
 

Step-by-Step
  1. Shred the green and red cabbage finely. Peel the mango and cut it into matchsticks, then thinly slice the red onion, chop the cilantro, and seed and finely chop the jalapeno if using.
  2. Whisk the fresh lime juice, olive oil, honey, kosher salt, cumin, optional cayenne, and freshly ground black pepper together in a small bowl until the honey is fully blended.
  3. Add the cabbage, mango, red onion, cilantro, and jalapeno to a large bowl. Pour the dressing over the mixture and toss thoroughly until the vegetables and fruit are evenly coated.
  4. Serve the slaw immediately for the crispest texture, or refrigerate it for 10 to 15 minutes to allow the flavors to blend. Toss again just before serving.

Notes

Choose a mango that yields slightly to pressure but is still firm enough to cut into strips. Add the dressing shortly before serving for extra-crisp cabbage, and serve the slaw the same day because it softens as it sits.
