Easy and Healthy Roasted Sweet Potatoes

Tender, caramelized sweet potato cubes are roasted at high heat with olive oil, salt, pepper, and optional garlic powder and paprika. They are simple enough for a weeknight dinner and flavorful enough for a holiday table.

  • 2 pounds, about 3-4 medium Sweet potatoes
  • 2 tablespoons Extra-virgin olive oil
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Freshly ground black pepper
Optional Seasonings
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Smoked paprika or sweet paprika

Method
 

Step-by-Step
  1. Heat the oven to 425°F (220°C). Line a large baking sheet with parchment paper if desired, or place the empty baking sheet in the oven while it heats for better browning.
  2. Scrub the sweet potatoes well and peel them if preferred. Cut them into evenly sized ¾- to 1-inch cubes so the pieces cook at the same rate.
  3. Pat the cubes dry with a clean kitchen towel. Toss them with the olive oil, kosher salt, black pepper, and optional garlic powder and paprika.
  4. Spread the seasoned sweet potatoes on the baking sheet in a single layer. Leave space between the pieces so hot air can circulate and the potatoes roast instead of steam.
  5. Roast for 25–35 minutes, turning or stirring once halfway through the cooking time. Remove the pan when the edges are browned and crisp and the centers are fork-tender.
  6. Serve the roasted sweet potatoes hot. Taste carefully and add a small pinch of salt only if needed.

Notes

For the best browning, use a large baking sheet and avoid overcrowding it. Smaller cubes cook faster and develop more browned edges, so watch them closely near the end of the roasting time.
