- Heat the oven to 425°F (220°C). Line a large baking sheet with parchment paper if desired, or place the empty baking sheet in the oven while it heats for better browning.
- Scrub the sweet potatoes well and peel them if preferred. Cut them into evenly sized ¾- to 1-inch cubes so the pieces cook at the same rate.
- Pat the cubes dry with a clean kitchen towel. Toss them with the olive oil, kosher salt, black pepper, and optional garlic powder and paprika.
- Spread the seasoned sweet potatoes on the baking sheet in a single layer. Leave space between the pieces so hot air can circulate and the potatoes roast instead of steam.
- Roast for 25–35 minutes, turning or stirring once halfway through the cooking time. Remove the pan when the edges are browned and crisp and the centers are fork-tender.
- Serve the roasted sweet potatoes hot. Taste carefully and add a small pinch of salt only if needed.
Notes
For the best browning, use a large baking sheet and avoid overcrowding it. Smaller cubes cook faster and develop more browned edges, so watch them closely near the end of the roasting time.
