- Scrub and thoroughly dry the russet potatoes. Pierce each potato several times with a fork, rub with olive oil, and season with about 1/2 teaspoon of the kosher salt.
- Preheat the air fryer to 400°F. Air-fry the potatoes for 35–45 minutes, turning once, until a knife or skewer slides easily into the centers.
- Cool the potatoes for 5–10 minutes, then slice off the top third lengthwise or cut each potato in half lengthwise. Carefully scoop out the flesh, leaving about 1/4 inch inside each shell.
- Mash the potato flesh with softened butter, sour cream, milk, the remaining salt, and black pepper. Fold in 3/4 cup cheddar, the crumbled bacon, and half of the sliced green onions.
- Spoon the filling into the potato shells and top with the remaining 1/4 cup cheddar. Return the potatoes to the air fryer at 375–400°F for 5–8 minutes, until hot and lightly browned.
- Garnish with the remaining green onions and serve immediately while the shells are crisp and the cheese is warm.
Notes
Dry potatoes thoroughly before oiling, and do not wrap them in foil because foil restricts air circulation. Air fryer sizes and potato weights vary, so test tenderness with a knife or skewer rather than relying only on the timer. Store leftovers covered in the refrigerator and reheat in the air fryer until hot.
