- Pat the sirloin dry with paper towels and cut it into evenly sized 1-inch cubes. Toss the cubes with olive oil, garlic powder, paprika, Italian seasoning, kosher salt, and black pepper.
- Preheat the air fryer to 400°F (200°C) for 3 to 5 minutes. Arrange the seasoned steak cubes in a single layer, leaving space between pieces for hot air to circulate.
- Air fry the steak bites at 400°F for 7 to 10 minutes, shaking or turning the basket halfway through. Begin checking early with an instant-read thermometer because air fryer temperatures vary.
- Remove the steak at approximately 130 to 135°F for medium-rare, 140 to 145°F for medium, or 150 to 155°F for medium-well. Toss immediately with melted butter and minced garlic, if using.
- Rest the steak bites for 2 to 3 minutes, then scatter chopped parsley over the top. Serve hot with your favorite sides, dipping sauce, or crusty bread.
Notes
For the best browning, dry the steak thoroughly and avoid overcrowding the air-fryer basket. Smaller cubes may cook in 6 to 8 minutes, while larger or more well-done pieces may need 10 to 12 minutes. Refrigerate leftovers promptly and reheat gently to help prevent the steak from drying out.
