- Preheat the air fryer to 400°F (200°C) for 3 to 5 minutes if your appliance requires preheating.
- Pat the sirloin very dry with paper towels. Trim away large pieces of fat or gristle, then cut the steak into evenly sized 1-inch cubes.
- Place the steak cubes in a bowl and toss with olive oil, garlic powder, steak seasoning or Italian seasoning, kosher salt, and black pepper.
- Arrange the seasoned steak in a single layer in the air-fryer basket, leaving space between pieces. Cook in two batches if needed.
- Air-fry at 400°F for 6 to 8 minutes for medium-rare to medium, shaking or turning halfway through. Add 1 to 2 minutes for more well-done bites.
- Check the largest piece with an instant-read thermometer. Aim for approximately 125°F for rare, 135°F for medium-rare, 145°F for medium, or 150°F to 160°F for medium-well to well-done.
- Transfer the hot steak bites to a bowl and toss with butter and chopped parsley. Rest for 2 to 3 minutes, then serve immediately.
Notes
Pat the steak dry and avoid overcrowding the basket for better browning. Steak bites become firmer as they cool, so serve them promptly. Cook time varies with cube size, air-fryer model, and desired doneness.
