- Scrub the potatoes, pat them completely dry, and leave the skins on. Slice them into approximately 1/4-inch rounds, keeping the slices as uniform as possible.
- Toss the potato slices with olive oil, kosher salt, black pepper, and optional garlic powder until every slice is lightly coated.
- Preheat the air fryer to 400°F (200°C) for 3–5 minutes if your appliance recommends preheating. Arrange the slices in a single layer and cook for 8–10 minutes.
- Turn the slices and cook for another 6–10 minutes, checking for tender centers and browned edges. Cook in batches if the basket is crowded.
- Top each cooked potato slice with shredded cheddar and crumbled bacon. Return the slices to the air fryer for 1–2 minutes, just until the cheese melts.
- Finish with sliced green onions and optional chopped chives. Serve immediately with sour cream.
Notes
Dry the slices thoroughly for better browning, keep them in a single layer, and add the cheese and bacon only near the end. Monterey Jack, Colby-Jack, or a cheddar-Monterey Jack blend can replace the cheddar. Ranch seasoning, smoked paprika, or chili powder may be added to the potato seasoning. Turkey bacon can be used for a lighter version, or the bacon can be omitted.
