- Whisk the flour, baking powder, and fine salt together in a medium bowl.
- Add the warm water and olive oil, then stir until a shaggy dough forms.
- Knead the dough by hand for 1–2 minutes, just until smooth. Keep the dough soft and slightly tacky rather than adding excessive flour.
- Cover the bowl and let the dough rest for 15–30 minutes so the gluten can relax and rolling becomes easier.
- Divide the dough into 6–8 equal pieces and roll each one into a thin round about 6–8 inches wide and 1/8 inch thick.
- Heat a dry cast-iron or heavy skillet over medium-high heat.
- Cook each flatbread for about 1–2 minutes on the first side, until bubbles form and brown spots appear. Turn and cook for another 30–60 seconds.
- Stack the cooked flatbreads in a clean towel to keep them warm and pliable.
Notes
A short rest is important because it prevents the dough from shrinking while rolling. Avoid overcooking, which can make the bread dry and brittle. A light brushing with olive oil after cooking is optional, but the base recipe uses only five ingredients.
