- Reserve a few strawberry pieces for garnish. Mash or purée the remaining strawberries until smooth or leave them slightly chunky, depending on whether you prefer an even mousse or visible fruit pieces.
- Beat the softened cream cheese until smooth. Add the powdered sugar gradually and continue beating until the mixture is creamy and free of lumps.
- Mix the strawberry purée into the cream-cheese mixture until evenly combined.
- In a separate cold bowl, whip the cold heavy cream to firm peaks.
- Gently fold the whipped cream into the strawberry mixture in two or three additions, taking care not to deflate the cream.
- Spoon or pipe the mousse into serving glasses, cover, and refrigerate for 1–2 hours, or until cold and set. Garnish with the reserved fresh strawberries before serving.
Notes
Soften the cream cheese fully before mixing to prevent lumps. Chill the bowl and beaters before whipping the cream, and fold gently to keep the mousse light. Use ripe, flavorful strawberries because there are very few additional flavors in this recipe. Store covered in the refrigerator and serve cold.
