  1. Heat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the peanut butter, sugar, egg, and baking soda until the dough is smooth and evenly combined.
  3. Scoop the dough into roughly 1-inch balls and place them about 2 inches apart on the prepared baking sheet.
  4. Flatten each dough ball with the tines of a fork, making the familiar crisscross pattern.
  5. Bake for 8–10 minutes, until the edges are set while the centers still look slightly soft.
  6. Cool the cookies on the baking sheet for about 5 minutes, then transfer them to a wire rack to finish cooling.

Notes

Do not overbake. Regular commercial peanut butter usually gives the most consistent texture. If using natural peanut butter, stir it thoroughly first; if the dough is unusually sticky, chill it for 15–30 minutes before shaping.
