Easy 30-Minute White Bean Turkey Chili

A quick, creamy white chili made with lean ground turkey, white beans, green chiles, corn, and warm spices. It is ready in about 30 minutes and serves 4–6.

  • 1 tablespoon Olive oil
  • 1 pound Lean ground turkey
  • 1 medium, about 1 1/2 cups Medium yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 1 medium, optional Jalapeño, seeded and minced
  • 2 teaspoons Chili powder
  • 1 1/2 teaspoons Ground cumin
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon, plus more to taste Kosher salt
  • 1/4 teaspoon Freshly ground black pepper
  • 2 15-ounce cans Cannellini beans or other white beans, drained and rinsed
  • 1 4-ounce can Diced green chiles
  • 3 cups Low-sodium chicken broth
  • 1/2 cup, optional Frozen corn
  • 1 tablespoon Fresh lime juice
Toppings
  • As desired Chopped fresh cilantro, diced avocado, shredded Monterey Jack or cheddar, sour cream or plain Greek yogurt, lime wedges, sliced jalapeño, or tortilla chips

Method
 

Step-by-Step
  1. Heat the olive oil in a large Dutch oven or heavy pot over medium-high heat. Add the ground turkey and cook for 4–5 minutes, breaking it into small pieces, until it is no longer pink.
  2. Add the diced onion and minced jalapeño, if using. Cook for 3–4 minutes, stirring occasionally, until the onion begins to soften.
  3. Stir in the garlic, chili powder, cumin, oregano, kosher salt, and black pepper. Cook for about 30 seconds, just until the garlic and spices become fragrant.
  4. Add the drained beans, diced green chiles, low-sodium chicken broth, and frozen corn, if using. Stir well and bring the mixture to a boil.
  5. Reduce the heat and simmer uncovered for 12–15 minutes, stirring occasionally. For a thicker chili, mash about 1/2 cup of the beans against the side of the pot or briefly mash part of the chili with a potato masher.
  6. Remove the pot from the heat and stir in the fresh lime juice. Taste and adjust the salt, pepper, or chili powder as needed.
  7. Ladle the chili into bowls and add your favorite toppings, such as cilantro, avocado, cheese, sour cream or Greek yogurt, lime wedges, sliced jalapeño, or tortilla chips.

Notes

Use low-sodium broth and canned beans when possible, then adjust the seasoning at the end. Leftovers can be refrigerated in an airtight container and gently reheated on the stovetop or in the microwave.
