  • 1/2 cup (120 ml) Neutral-flavored vegetable oil, such as canola or mild vegetable oil

Step-by-Step
  1. Heat the oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  2. Add the dry spice cake mix, eggs, and oil to a large bowl. Stir until a thick, evenly combined dough forms.
  3. Scoop rounded tablespoonfuls of dough onto the prepared baking sheets, leaving about 2 inches between cookies.
  4. Bake for 10–12 minutes, until the edges are set and the centers look slightly soft.
  5. Let the cookies cool on the baking sheet for about 5 minutes, then transfer them to a wire rack.

Notes

Do not overbake; the centers may look slightly underdone when the cookies come out but will firm as they cool. If the dough is difficult to scoop, refrigerate it for 20–30 minutes. A cookie scoop helps make evenly sized cookies.
