- Line an 8-inch square pan with parchment paper, leaving enough overhang on two sides to lift out the chilled fudge.
- Place the white chocolate chips and sweetened condensed milk in a microwave-safe bowl. Microwave in 30-second intervals, stirring thoroughly after each interval, until the mixture is smooth; alternatively, melt them together in a saucepan over low heat.
- Remove the bowl or saucepan from the heat and stir in the peppermint extract. Immediately spread the mixture evenly in the prepared pan.
- Sprinkle the surface with crushed peppermint candies, if using, and press them lightly into the fudge. Refrigerate for approximately 2 hours, or until firm.
- Lift the fudge from the pan using the parchment overhang. Cut it into small squares with a sharp warm knife, wiping the blade dry between cuts.
Notes
Use sweetened condensed milk, not evaporated milk. Stir frequently and remove the white chocolate mixture from heat as soon as it is smooth to prevent scorching, thickening, or graininess. Store the cut fudge in an airtight container in the refrigerator.
