  1. Heat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Add the creamy peanut butter, granulated sugar, and large egg to a mixing bowl. Stir until the mixture is smooth and fully combined.
  3. Scoop the dough into roughly 1-tablespoon portions and roll each portion into a ball. Arrange the balls on the prepared baking sheet with about 2 inches between them.
  4. Flatten each dough ball with a fork, pressing once in one direction and again across it to create a crisscross pattern.
  5. Bake for approximately 10 minutes, or until the edges are set while the centers still look slightly soft.
  6. Leave the cookies on the baking sheet for 5 minutes after baking. Transfer them to a wire rack to finish cooling and firming.

Notes

Use regular commercial creamy peanut butter instead of loose, oily natural peanut butter for the most consistent dough. Do not overbake, because these flourless cookies can become dry and crumbly.
