- Heat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Stir the peanut butter, granulated sugar, and egg together until a thick, smooth dough forms.
- Scoop the dough into roughly 1-tablespoon portions and roll each portion into a ball.
- Arrange the balls on the prepared baking sheet, leaving about 2 inches between them, then flatten each with a fork in a crisscross pattern.
- Bake for 8–12 minutes, removing the cookies when the edges look set while the centers remain slightly soft.
- Cool the cookies on the baking sheet for about 5 minutes before transferring them to a rack.
Notes
Use regular no-stir creamy peanut butter for the most reliable texture. Natural peanut butter must be thoroughly mixed and may make the dough oily or cause extra spreading. Do not overbake; the cookies firm as they cool.
