  1. Heat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Stir the peanut butter, granulated sugar, and egg together until a thick, smooth dough forms.
  3. Scoop the dough into roughly 1-tablespoon portions and roll each portion into a ball.
  4. Arrange the balls on the prepared baking sheet, leaving about 2 inches between them, then flatten each with a fork in a crisscross pattern.
  5. Bake for 8–12 minutes, removing the cookies when the edges look set while the centers remain slightly soft.
  6. Cool the cookies on the baking sheet for about 5 minutes before transferring them to a rack.

Notes

Use regular no-stir creamy peanut butter for the most reliable texture. Natural peanut butter must be thoroughly mixed and may make the dough oily or cause extra spreading. Do not overbake; the cookies firm as they cool.
