Easy 3-Ingredient Omelet Bites (Quick & Healthy)

Tender baked omelet bites made with eggs, cottage cheese, and shredded cheese. They are simple enough for a quick breakfast and attractive enough for an appetizer platter.

  • 6 Large eggs
  • 1 cup Small-curd cottage cheese, 2% or full-fat preferred
  • 1 cup Shredded cheddar, Monterey Jack, or cheddar-Jack blend
Optional Seasoning
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Grease all 12 cups of a muffin pan generously, or line the pan with silicone muffin liners.
  2. Blend or whisk the eggs and cottage cheese until mostly smooth. Stir in 3/4 cup of the shredded cheese, then add the optional salt and black pepper.
  3. Divide the mixture evenly among the muffin cups, filling each about two-thirds full. Sprinkle the remaining 1/4 cup cheese over the tops.
  4. Bake for 18–22 minutes, until the centers are set and the bites are lightly puffed. Remove them when they no longer look wet in the middle.
  5. Cool the omelet bites in the pan for 5 minutes before removing. They will deflate slightly as they cool, which is normal.

Notes

Grease metal muffin cups generously because baked eggs cling easily. Refrigerate in an airtight container for up to 4 days, reheating each bite for about 20–30 seconds in the microwave. Freeze for approximately 1–2 months and thaw overnight before reheating.
