  • 3 cups (about 510 g) White chocolate chips
  • 1 14-ounce can (396 g) Sweetened condensed milk
  • 1 tablespoon Gingerbread spice or gingerbread-cookie spice

Method
 

Step-by-Step
  1. Line an 8-inch square baking pan with parchment paper, leaving enough paper overhang on two sides to lift out the chilled fudge.
  2. Add the white chocolate chips, sweetened condensed milk, and gingerbread spice to a microwave-safe bowl.
  3. Microwave the mixture in 30-second intervals, stirring thoroughly after each interval, until smooth. Stop when only a few small pieces remain and allow the residual heat and stirring to finish melting them.
  4. Immediately spread the melted mixture evenly into the prepared pan while it is still warm and fluid.
  5. Refrigerate the pan for at least 2 hours, or until the fudge is firm throughout.
  6. Lift the fudge from the pan using the parchment overhang, then cut it into small squares with a sharp knife.

Notes

Use sweetened condensed milk, not evaporated milk. For the cleanest cuts, chill the fudge thoroughly and warm the knife, wiping it dry between slices. The ingredients can also be melted in a saucepan over low heat for about 5 minutes, stirring constantly.
