  • 1 14-ounce can (396 g) Sweetened condensed milk
  • 1 teaspoon Cotton-candy flavoring or cotton-candy extract
Optional Decorations
  • a small amount Pink gel food coloring
  • a small amount Blue gel food coloring
  • as desired Cotton candy pieces or sprinkles

Method
 

Step-by-Step
  1. Line an 8-inch square pan with parchment paper, leaving enough overhang on two sides to lift out the chilled fudge.
  2. Add the white chocolate chips and sweetened condensed milk to a microwave-safe bowl. Microwave for 30 seconds, stir thoroughly, and continue in short intervals until smooth, using about 1 to 3 minutes total.
  3. Stir in the cotton-candy flavoring or extract until evenly distributed throughout the melted mixture.
  4. Divide the mixture between two bowls. Tint one portion pink and the other blue using small amounts of gel food coloring.
  5. Spoon the pink and blue mixtures into the prepared pan, alternating colors. Gently swirl with a knife or skewer, taking care not to overmix.
  6. Refrigerate for about 2 hours, or until completely firm. Lift the fudge from the pan using the parchment overhang, cut into squares, and decorate with optional cotton candy or sprinkles.

Notes

Use gel food coloring instead of liquid coloring for bright shades without adding extra moisture. Stir well after every microwave interval and stop heating as soon as the mixture is smooth, because white chocolate can scorch and will continue melting from residual heat.
