  • 1 can, 15 ounces Pure pumpkin puree

  1. Heat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment if desired.
  2. Add the spice cake mix, pumpkin puree, and pumpkin pie spice to a large bowl. Stir just until the dry mix is incorporated; the batter will be thick.
  3. Fold in 1/2 to 1 cup of chocolate chips, chopped pecans, or walnuts if using.
  4. Spread the batter evenly in the prepared loaf pan.
  5. Bake for approximately 40–55 minutes, until a toothpick inserted in the center comes out clean or with only a few moist crumbs.
  6. Cool in the pan for about 10–15 minutes, then transfer the loaf to a wire rack and cool for at least another 20–30 minutes before slicing.

Notes

Use pure pumpkin puree, not pumpkin pie filling. Do not add eggs, oil, or milk to the three-ingredient version. Begin checking the loaf early because pan materials and ovens vary. Store cooled bread tightly wrapped at room temperature for a short period or refrigerate for longer storage.
