  • 1 box, approximately 15.25 ounces Lemon cake mix
  • 1 can, 21 ounces Lemon pie filling

  • 1/2 cup, for dusting Confectioners’ sugar

Step-by-Step
  1. Heat the oven to 350°F (175°C). Grease a 13-by-9-inch baking pan, and line it with parchment paper with a little overhang if desired.
  2. In a large bowl, stir the dry lemon cake mix and lemon pie filling together until evenly combined. Do not prepare the cake mix according to the box directions.
  3. Spread the thick batter evenly in the prepared pan. Bake for 20–25 minutes, or until the center is set and a toothpick inserted near the center comes out with only a few moist crumbs.
  4. Cool the pan completely on a rack for about 30 minutes, or until the bars are firm enough to cut. Dust the cooled bars with confectioners’ sugar before slicing into about 24 pieces.

Notes

Do not overbake, because these bars are intended to be moist and soft. Use parchment with overhang for easier removal, and wait until the bars are cool before dusting so the sugar stays visible.
