Easy 3-Cheese Chicken Carbonara

A creamy chicken and bacon pasta tossed in a smooth sauce made with Parmesan, mozzarella, and sharp cheddar. This comforting dinner is ready in about 45–50 minutes and serves 4–6 people.

Ingredients
  

Pasta and Protein
  • 12 ounces Spaghetti or linguine
  • 1 pound Boneless, skinless chicken breasts, cut into bite-size pieces
  • 6-8 slices Bacon, chopped
  • 2 tablespoons Olive oil, as needed
Aromatics and Seasoning
  • 3 cloves Garlic, minced
  • 1/2 teaspoon Salt, plus more for pasta water
  • 1/4 teaspoon Black pepper
  • 1/4 teaspoon Italian seasoning, optional
Creamy Three-Cheese Sauce
  • 1 cup Heavy cream
  • 1/2 cup Whole milk
  • 1/2 cup Grated Parmesan cheese
  • 1/2 cup Shredded mozzarella cheese
  • 1/2 cup Shredded sharp cheddar cheese
Finishing
  • 2 tablespoons Fresh parsley, chopped
  • 1/2-1 cup Reserved pasta water

Method
 

Step-by-Step
  1. Bring a large pot of well-salted water to a boil. Cook the spaghetti or linguine until al dente according to the package directions, reserve at least 1 cup of pasta water, and then drain.
  2. Cook the chopped bacon in a large skillet over medium heat until crisp. Transfer it to a paper-towel-lined plate and leave about 1 tablespoon of bacon fat in the skillet.
  3. Season the chicken with the salt, black pepper, and optional Italian seasoning. Add it to the skillet and cook for approximately 5–7 minutes, turning occasionally, until browned and cooked through; transfer the chicken to a plate.
  4. Add the minced garlic to the skillet and cook for about 30 seconds. Stir constantly and do not let the garlic brown.
  5. Reduce the heat to low and pour in the heavy cream and whole milk. Stir to loosen the browned bits from the bottom of the pan.
  6. Add the Parmesan, mozzarella, and sharp cheddar a little at a time, stirring until the cheeses melt into a smooth sauce. Do not boil the sauce, because high heat can cause the cream and cheese to separate.
  7. Return the chicken and bacon to the skillet, add the drained pasta, and toss until coated. Add reserved pasta water a few tablespoons at a time until the sauce is smooth and glossy.
  8. Garnish with chopped fresh parsley and serve immediately while the sauce is creamy and the pasta is hot.

Notes

Reserve pasta water before draining because its starch helps thin and emulsify the cheese sauce. Keep the sauce over low heat after adding the cheese, and do not boil it. Refrigerate leftovers promptly and reheat gently with a small splash of milk or reserved pasta water.
