- Place the gelatin powder in a mixing bowl and pour in the 2 cups of boiling water. Stir until every grain of gelatin has dissolved and the liquid looks clear and evenly colored.
- Add the softened cream cheese in small pieces while the gelatin mixture is still warm. Smaller pieces blend more quickly and help prevent stubborn lumps.
- Beat with an electric mixer, blender, or immersion blender until smooth and mostly free of lumps. Work while the mixture is warm, but never bring it to a boil.
- Pour the blended mixture into a lightly greased mold, serving bowl, or small baking dish. Smooth the surface if needed, then carefully transfer the dish to the refrigerator.
- Refrigerate for at least 4 hours, or preferably overnight, until the salad is completely firm. Serve chilled, either directly from the bowl or unmolded onto a serving plate.
Notes
Soften the cream cheese before beginning and cut it into cubes for the smoothest texture. If using a mold, briefly dip the outside in warm water before inverting it onto a plate. Keep the salad refrigerated until serving.
