Easy 2-Ingredient Cream Cheese Jello Salad

A creamy, colorful gelatin salad made with flavored gelatin, cream cheese, and boiling water. It takes about 10 minutes to prepare and chills until completely firm before serving.

  • 1 package (6 ounces) Flavored gelatin dessert, such as lime, cherry, strawberry, or orange
  • 1 package (8 ounces) Cream cheese, softened and cut into pieces
  • 2 cups Boiling water

Step-by-Step
  1. Place the gelatin powder in a mixing bowl and pour in the 2 cups of boiling water. Stir until every grain of gelatin has dissolved and the liquid looks clear and evenly colored.
  2. Add the softened cream cheese in small pieces while the gelatin mixture is still warm. Smaller pieces blend more quickly and help prevent stubborn lumps.
  3. Beat with an electric mixer, blender, or immersion blender until smooth and mostly free of lumps. Work while the mixture is warm, but never bring it to a boil.
  4. Pour the blended mixture into a lightly greased mold, serving bowl, or small baking dish. Smooth the surface if needed, then carefully transfer the dish to the refrigerator.
  5. Refrigerate for at least 4 hours, or preferably overnight, until the salad is completely firm. Serve chilled, either directly from the bowl or unmolded onto a serving plate.

Notes

Soften the cream cheese before beginning and cut it into cubes for the smoothest texture. If using a mold, briefly dip the outside in warm water before inverting it onto a plate. Keep the salad refrigerated until serving.
