- Pat the fish dry with paper towels and season both sides with the salt and black pepper. If using the optional flour, dredge each fillet lightly and shake off the excess.
- Heat the olive oil and 1 tablespoon of the butter in a large skillet over medium-high heat. Add the fish and cook for approximately 3–4 minutes on the first side.
- Turn the fillets carefully and cook for another 2–4 minutes on the second side. The fish is ready when it flakes easily and reaches 145°F / 63°C internally; transfer it to a plate.
- Reduce the heat to medium and add the remaining 3 tablespoons of butter. Once melted, stir in the minced garlic and cook for about 30–60 seconds, just until fragrant without allowing it to brown.
- Stir the lemon juice and parsley into the garlic butter. Spoon the sauce over the fish and serve immediately with lemon wedges.
Notes
Dry the fish thoroughly for better browning. Add the garlic only after lowering the heat because garlic burns quickly and may make the butter bitter. For thick fillets, use an instant-read thermometer and remove the fish at about 140–145°F / 60–63°C.
