Tender bite-size chicken pieces are seasoned, pan-seared until golden, and tossed in garlic butter with parsley and optional lemon juice. This quick recipe makes approximately 24 to 30 chicken bites and serves four as an appetizer.

Ingredients
  

Chicken and Seasoning
  • 1 1/2 pounds Boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon Onion powder
  • 1/2 teaspoon Paprika
For Cooking
  • 1 tablespoon Olive oil
  • 3 tablespoons Unsalted butter, divided
  • 3-4 cloves Garlic cloves, finely minced
Finishing
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Lemon juice, optional

Method
 

Step-by-Step
  1. Pat the chicken dry and cut it into evenly sized 1-inch pieces. Season all over with kosher salt, black pepper, Italian seasoning, onion powder, and paprika.
  2. Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the chicken in a single layer and cook for approximately 3 to 4 minutes per side, turning occasionally, until browned and the internal temperature reaches 165°F (74°C).
  3. Reduce the heat to medium and add the remaining 2 tablespoons of butter and minced garlic. Stir constantly for 30 to 60 seconds, just until the garlic is fragrant and the butter coats the chicken.
  4. Remove the skillet from the heat and toss the chicken with chopped parsley and optional lemon juice. Serve immediately with toothpicks, crostini, or your favorite dipping sauce.

Notes

Do not overcrowd the skillet; cook in two batches if needed so the chicken browns instead of steams. Add the garlic only after the chicken has browned to prevent burning. Refrigerate leftovers in a covered container and reheat gently until hot.
