Ingredients

Main Ingredients
  • 1 pound Large shrimp, peeled and deveined, fresh or thawed frozen
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 3–4 cloves Garlic, finely minced
Seasoning and Finish
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Freshly ground black pepper
  • 1 tablespoon Fresh lemon juice
  • 2 tablespoons Fresh parsley, chopped
Optional
  • 1/4 teaspoon Red-pepper flakes

Method

Step-by-Step
  1. Pat the shrimp very dry with paper towels, then season with the kosher salt and black pepper.
  2. Heat a large skillet over medium-high heat. Add the olive oil and 1 tablespoon of the butter.
  3. Add the minced garlic and cook for about 30 seconds, just until fragrant. Do not let the garlic brown.
  4. Arrange the shrimp in a single layer and sauté for approximately 1–2 minutes per side, turning once, until pink, opaque, and loosely curled into a C shape.
  5. Reduce the heat to low and add the remaining tablespoon of butter and the lemon juice. Toss until the butter melts and coats the shrimp.
  6. Remove the skillet from the heat, sprinkle with parsley, and serve immediately. Add red-pepper flakes if desired.

Notes

Pat shrimp dry so they sauté instead of steam, and cook them in a single layer. Remove them from the heat as soon as they are opaque and loosely curled into a C shape; a tightly curled O shape usually means they have been overcooked.
