- Pat the shrimp very dry with paper towels, then season with the kosher salt and black pepper.
- Heat a large skillet over medium-high heat. Add the olive oil and 1 tablespoon of the butter.
- Add the minced garlic and cook for about 30 seconds, just until fragrant. Do not let the garlic brown.
- Arrange the shrimp in a single layer and sauté for approximately 1–2 minutes per side, turning once, until pink, opaque, and loosely curled into a C shape.
- Reduce the heat to low and add the remaining tablespoon of butter and the lemon juice. Toss until the butter melts and coats the shrimp.
- Remove the skillet from the heat, sprinkle with parsley, and serve immediately. Add red-pepper flakes if desired.
Notes
Pat shrimp dry so they sauté instead of steam, and cook them in a single layer. Remove them from the heat as soon as they are opaque and loosely curled into a C shape; a tightly curled O shape usually means they have been overcooked.
