Double Crunch Honey Garlic Chicken Breasts

Crispy double-coated chicken breasts are shallow-fried until golden and finished with a warm honey-garlic soy sauce. This dinner recipe serves four and takes about 30 minutes from start to finish.

Chicken
  • 4 large boneless, skinless chicken breasts
  • 2 cups all-purpose flour
  • 4 teaspoons salt
  • 4 teaspoons ground black pepper
  • 4 tablespoons ground ginger
  • 4 tablespoons ground nutmeg
  • 2 tablespoons dried thyme
  • 2 tablespoons dried sage
  • 4 tablespoons paprika
  • 2 teaspoons cayenne pepper
  • 2 large eggs
  • 4 tablespoons water
  • As needed canola oil, for shallow frying
Honey-Garlic Sauce
  • 2 tablespoons olive oil
  • 3 to 4 cloves garlic, minced
  • 1 cup honey
  • 1/4 cup soy sauce
  • 1 teaspoon ground black pepper

Method
 

Step-by-Step
  1. Place the chicken breasts between sheets of plastic wrap and pound them to an even thickness of approximately 1/2 inch. Cut especially large breasts into smaller portions if needed.
  2. In a shallow dish, combine the flour, salt, black pepper, ginger, nutmeg, thyme, sage, paprika, and cayenne pepper. In a second shallow dish, whisk the eggs and water together.
  3. Coat each chicken breast in the seasoned flour, dip it into the egg mixture, then coat it again in the seasoned flour. Press the second flour layer firmly onto the chicken.
  4. Heat about 1/2 inch of canola oil in a large skillet over medium to medium-high heat, aiming for approximately 350°F. Fry the chicken in batches for about 4 to 5 minutes per side, until deeply golden and 165°F at the thickest part.
  5. Drain the fried chicken on a wire rack or paper towels, with a wire rack preferred for keeping the underside crisp. Fry remaining pieces without overcrowding the skillet.
  6. For the sauce, warm the olive oil in a saucepan over medium heat. Add the minced garlic and cook briefly until softened, taking care not to brown it.
  7. Add the honey, soy sauce, and ground black pepper to the saucepan. Simmer gently for 5 to 10 minutes, then remove the sauce from the heat.
  8. Spoon or brush the honey-garlic sauce over the chicken immediately before serving. This timing protects the crisp coating while still giving every bite plenty of sauce.

Notes

Keep the oil near 350°F and fry in batches. Use an instant-read thermometer to confirm that the chicken reaches 165°F. Sauce the chicken just before serving because coating it too early softens the crust.
