Dijon Chicken and Mushroom Linguine Made Easy

Tender chicken and browned mushrooms are tossed with linguine in a creamy Dijon mustard sauce. This comforting dinner comes together in about 35–40 minutes and serves four.

Pasta and Chicken
  • 12 ounces linguine
  • 1 pound boneless, skinless chicken breasts, cut into bite-size strips
  • 2 tablespoons olive oil
Vegetables and Aromatics
  • 8 ounces fresh mushrooms, sliced
  • 1 small yellow onion, finely chopped
  • 2 garlic cloves, minced
Sauce
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons Dijon mustard
Seasoning and Garnish
  • 1/2 teaspoon dried thyme, optional
  • 3/4 teaspoon kosher salt, divided, plus more for pasta water
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup grated Parmesan, optional

Method
 

Step-by-Step
  1. Bring a large pot of generously salted water to a boil. Cook the linguine until al dente according to the package directions, reserve about 1/2 cup of pasta water, and drain.
  2. Season the bite-size chicken strips with about 1/2 teaspoon of the kosher salt and the black pepper. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the chicken and cook for approximately 4–6 minutes, turning occasionally, until browned and cooked through. Transfer the chicken to a plate.
  4. Add the sliced mushrooms and chopped onion to the same skillet. Cook for 5–7 minutes, until the mushrooms release their moisture and begin to brown.
  5. Stir in the minced garlic and dried thyme, if using. Cook for about 30 seconds, just until the garlic becomes fragrant.
  6. Pour in the chicken broth and scrape up the browned bits from the bottom of the skillet. Simmer for 1–2 minutes so the broth picks up the savory flavor in the pan.
  7. Reduce the heat to medium-low, then stir in the heavy cream and Dijon mustard. Simmer gently for 2–3 minutes, avoiding a vigorous boil so the creamy sauce stays smooth.
  8. Return the cooked chicken to the skillet and add the drained linguine. Toss until the pasta is coated, adding a little reserved pasta water if the sauce is too thick.
  9. Taste and adjust the salt and pepper as needed. Finish with chopped parsley and grated Parmesan, if desired, and serve immediately.

Notes

For well-browned mushrooms, cook them in a single layer and avoid crowding the skillet. Add Dijon after the broth reduces and lower the heat before adding the cream. Reserve pasta water before draining because its starch helps loosen and emulsify the sauce. Refrigerate leftovers in a covered container and reheat gently with a small splash of broth or water.
