Diet Coke Brownies

  • 1 12 fl oz can Diet Coke

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Grease an 8-inch or 9-inch square pan with nonstick cooking spray, or line it with parchment paper.
  2. Add the dry fudge brownie mix to a large mixing bowl. Pour in the entire 12-ounce can of Diet Coke, and do not add the eggs, oil, or water listed on the box.
  3. Stir just until the dry mix is moistened and the batter is reasonably smooth. Fold in 1/2 cup of chocolate chips or chopped walnuts if desired.
  4. Spread the batter evenly in the prepared pan. Bake for 25–30 minutes, beginning to check a few minutes early because soda-based brownies may brown before the center is finished.
  5. Test near the center with a toothpick. The brownies are ready when it comes out with moist crumbs rather than wet batter; do not wait for a completely clean toothpick.
  6. Cool the brownies in the pan for at least 20–30 minutes before cutting. For an even denser texture, chill them briefly after they have cooled.

Notes

Use a dark or fudge-style brownie mix weighing about 18–19 ounces for the most reliable result with a full 12-ounce can of Diet Coke. An 8-inch or 9-inch square pan makes thicker brownies, while a 9 x 13-inch pan makes thinner brownies and usually takes about 20–25 minutes to bake.
