- Wash and thoroughly dry the romaine, chop it into bite-size pieces, and place it in a large bowl.
- Add the tomatoes, pepperoni, mozzarella, olives, red onion, pepperoncini, croutons, and Parmesan to the bowl.
- Pour in about 1/3 cup of the Italian dressing and toss gently until the ingredients are lightly coated.
- Add more dressing as needed, then season with freshly ground black pepper and garnish with chopped basil or parsley.
- Serve immediately so the romaine stays crisp and the croutons retain their crunch.
Notes
For homemade pizza croutons, cut 2 cups of Italian or French bread into cubes. Toss with 1 tablespoon olive oil, 1/2 teaspoon Italian seasoning, and a pinch of salt, then bake at 400°F (200°C) for 10–12 minutes, turning once, until crisp and lightly browned. Drain olives and peppers well, and add croutons last when possible.
