- Heat the oven to 350°F (175°C). Grease and flour a 10 x 15-inch jelly-roll pan, or line it with parchment paper.
- In a large bowl, beat the eggs, granulated sugar, oil, and pumpkin puree until smooth. In a separate bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the pumpkin mixture, mixing only until combined. Spread the batter evenly in the prepared pan.
- Bake for 25–30 minutes, until the center springs back lightly and a toothpick inserted in the center comes out clean or with a few moist crumbs. Cool the bars completely in the pan.
- For the frosting, beat the softened cream cheese and butter until smooth and creamy. Add the vanilla, then gradually beat in the powdered sugar until the frosting is smooth and spreadable.
- Spread the frosting over the fully cooled pumpkin bars. Cut into squares or rectangles, and refrigerate the frosted bars for 30–60 minutes if you want especially clean cuts and firmer frosting.
Notes
Use plain pumpkin puree, not pumpkin pie filling. For a thicker, more pronounced cream cheese layer, use 6 ounces of cream cheese while keeping the butter and powdered sugar quantities the same. Store frosted bars refrigerated.
