Decadent Mocha Latte Salted Caramel Cupcakes

Ingredients
  

Mocha Cupcakes
  • 1 cup (125 g) All-purpose flour
  • 3/4 cup (150 g) Granulated sugar
  • 1/2 cup (43–45 g) Unsweetened natural cocoa powder
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon Fine salt
  • 1 large Large egg, room temperature
  • 1/2 cup (120 ml) Buttermilk
  • 1/4 cup (60 ml) Neutral vegetable oil
  • 1 teaspoon Vanilla extract
  • 1/2 cup (120 ml) Hot strong coffee or hot water
  • 1–2 teaspoons Instant espresso powder, optional when using coffee
Salted Caramel Sauce
  • 1 cup (200 g) Granulated sugar
  • 6 tablespoons (85 g) Unsalted butter, cut into pieces
  • 1/2 cup (120 ml) Heavy cream, warmed
  • 3/4–1 teaspoon Fine sea salt
  • 1 teaspoon Vanilla extract, optional
Caramel Buttercream
  • 1 cup (226 g) Unsalted butter, softened
  • 3 1/2–4 cups (400–480 g) Confectioners’ sugar, sifted
  • 1/2 cup (120 ml) Cooled salted caramel sauce
  • 1 teaspoon Vanilla extract
  • 1–2 tablespoons Heavy cream or milk, as needed
  • 1/4 teaspoon Fine salt, only if needed
Garnish
  • as needed Extra salted caramel sauce
  • as needed Flaky sea salt
  • as needed Chocolate-covered espresso beans or finely chopped chocolate

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners. Whisk the flour, sugar, cocoa powder, baking soda, baking powder, and fine salt together in a large bowl.
  2. In a separate bowl, whisk the room-temperature egg, buttermilk, vegetable oil, and vanilla until smooth. Add the wet mixture to the dry ingredients and stir just until no dry streaks remain.
  3. Stir the espresso powder into the hot coffee, if using, and gradually whisk the hot liquid into the batter. The batter will be thin, which is expected for this moist chocolate cupcake formula.
  4. Divide the batter evenly among the liners, filling each about two-thirds full. Bake for 18–22 minutes, until the tops spring back lightly and a toothpick shows a few moist crumbs.
  5. Cool the cupcakes in the pan for about 5 minutes, then transfer them to a wire rack to cool completely. Do not fill or frost warm cupcakes because the caramel and buttercream can become runny.
  6. For the caramel, cook the sugar in a dry saucepan over medium heat until melted and amber in color. Carefully whisk in the butter, slowly add the warmed cream while standing back from the bubbling mixture, then stir in the salt and optional vanilla.
  7. Cool the caramel until it is thick but still spreadable, reserving some for the cupcake centers and final drizzle. If it becomes too firm, warm it very gently until it loosens.
  8. Beat the softened butter until smooth and pale, then gradually add the sifted confectioners’ sugar. Beat in the cooled caramel and vanilla, adding heavy cream or milk as needed until the frosting reaches a pipeable consistency.
  9. Cut a small cone from the center of each cooled cupcake and spoon in a little salted caramel, replacing the cake cap if desired. Pipe the caramel buttercream over each cupcake, drizzle with extra caramel, and finish with flaky salt and espresso beans or chopped chocolate.

Notes

Use hot coffee when possible because it strengthens the cocoa flavor. Cool the caramel completely before mixing it into the buttercream. For a stronger mocha flavor, use 2 teaspoons espresso powder in the batter and 1/2–1 teaspoon in the frosting after dissolving it in a teaspoon of hot cream or water. Store covered in the refrigerator and allow the cupcakes to sit at room temperature before serving.
