Decadent Chocolate Cherry Cheesecake

A rich baked chocolate cheesecake with a crisp chocolate cookie crust, cherry pie filling, and optional chocolate ganache. This impressive dessert serves 10–12 and is best chilled overnight.

Ingredients
  

Chocolate Cookie Crust
  • 24 cookies, about 270 g Chocolate sandwich cookies, finely crushed
  • 5 tablespoons Unsalted butter, melted
  • 1 pinch, optional Salt
Chocolate Cheesecake Filling
  • 24 ounces Full-fat cream cheese, softened
  • 1 cup Granulated sugar
  • 1/4 cup, about 21 g Unsweetened cocoa powder
  • 4 ounces Semisweet or bittersweet chocolate, melted and slightly cooled
  • 3 eggs Large eggs, room temperature
  • 1/2 cup Sour cream, room temperature
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Salt
Cherry Topping
  • 21 ounces, 1 can Cherry pie filling
Homemade Cherry Topping
  • 2 cups Pitted sweet or sour cherries, fresh or frozen
  • 1/3 cup Granulated sugar
  • 1 tablespoon Cornstarch
  • 1 tablespoon Lemon juice
  • 1 tablespoon Water
Optional Chocolate Ganache
  • 4 ounces Semisweet chocolate, finely chopped
  • 1/2 cup Heavy cream

Method
 

Step-by-Step
  1. Heat the oven to 325°F (163°C), lightly grease a 9-inch springform pan, and wrap the outside with foil if using a water bath.
  2. Combine the cookie crumbs, melted butter, and optional salt. Press the mixture firmly over the bottom and slightly up the sides of the pan, then bake for 8–10 minutes and cool briefly.
  3. Melt the chocolate gently in the microwave or over a double boiler. Set it aside until warm rather than hot.
  4. Beat the softened cream cheese and sugar on low to medium speed until smooth. Mix in the cocoa powder and salt.
  5. Add the melted chocolate, sour cream, and vanilla, mixing only until incorporated.
  6. Add the eggs one at a time on low speed, mixing only until each egg disappears into the batter.
  7. Pour the batter over the crust and bake at 325°F for approximately 60–75 minutes, until the edges are set and the center has a slight wobble.
  8. Turn off the oven, crack the door, and leave the cheesecake inside for about 30 minutes. Remove it, cool completely at room temperature, and refrigerate for at least 6 hours, preferably overnight.
  9. Spread the cherry pie filling over the chilled cheesecake shortly before serving, or prepare and cool the homemade cherry topping before spooning it over the cake.
  10. For ganache, pour steaming heavy cream over chopped chocolate, wait 2 minutes, and stir until smooth. Cool slightly, then drizzle over the cheesecake or spread it on top before adding the cherries.

Notes

Use room-temperature dairy and eggs for a smooth batter. Avoid overmixing after adding the eggs. Chill overnight when possible, and slice with a thin knife warmed under hot water and wiped dry between cuts.
