Curry Tomato Soup with Cumin-Roasted Shrimp

A silky curried tomato soup topped with cumin-seasoned shrimp roasted until pink and opaque. This comforting fish recipe serves about four people and comes together in roughly 40 to 45 minutes.

Ingredients
  

Soup
  • 2 tablespoons Extra-virgin olive oil
  • 1 medium Medium onion, finely chopped
  • 2 cloves Garlic cloves, minced
  • 1 tablespoon Curry powder
  • 1 teaspoon Ground cumin
  • 1/4 teaspoon Cayenne pepper or crushed red pepper
  • 2 cans (28 ounces each) Whole peeled tomatoes
  • 4 cups Chicken stock or low-sodium chicken broth
  • To taste Kosher salt and freshly ground black pepper
Shrimp
  • 1 pound Large shrimp, peeled and deveined
  • 1 tablespoon Extra-virgin olive oil
  • 1 teaspoon Ground cumin
  • To taste Salt and freshly ground black pepper
For Serving
  • Optional Fresh cilantro, chopped

Method
 

Step-by-Step
  1. Heat 2 tablespoons olive oil in a large saucepan or Dutch oven over medium heat. Add the chopped onion and minced garlic, then cook for about 5 minutes, stirring occasionally, until the vegetables are soft and fragrant.
  2. Stir the curry powder, 1 teaspoon ground cumin, and cayenne pepper or crushed red pepper into the softened onion mixture. Cook for about 1 minute, stirring constantly, until the spices smell fragrant.
  3. Add the whole peeled tomatoes and chicken stock or low-sodium chicken broth. Bring the mixture to a boil, reduce the heat, and simmer for approximately 15 to 20 minutes.
  4. Purée the soup until smooth with an immersion blender, or blend it in small batches using a standard blender. Season with kosher salt and freshly ground black pepper, then return the soup to the pan and keep it warm.
  5. Heat the oven to approximately 425°F. Toss the peeled and deveined shrimp with 1 tablespoon olive oil, 1 teaspoon ground cumin, salt, and pepper, then arrange them in a single layer on a baking sheet.
  6. Roast the shrimp for about 5 to 7 minutes, turning once if needed, until they are pink and opaque. Remove them as soon as they curl slightly because residual heat will continue cooking them.
  7. Ladle the hot soup into bowls and top each serving with the cumin-roasted shrimp. Garnish with chopped fresh cilantro if desired and serve immediately.

Notes

Do not overcook the shrimp. For conventional blender use, work in small batches and remove or loosen the lid's center insert so steam can escape. The soup may be prepared ahead and refrigerated; reheat it gently and roast the shrimp just before serving.
