Crockpot Stuffing

Buttery, herb-seasoned stuffing made with dried bread cubes, sautéed vegetables, and broth in the slow cooker. It makes about 10 to 12 servings and is ideal for a holiday meal.

Ingredients
  

Stuffing
  • 12 cups Dried bread cubes, preferably 1-inch cubes
  • 1 cup (2 sticks) Unsalted butter
  • 1 medium Medium yellow onion, finely diced
  • 2-3 cups Celery, diced
Seasonings
  • 2 teaspoons Rubbed sage
  • 1 teaspoon Poultry seasoning
  • 1/2 teaspoon Dried thyme
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
Binding and Liquid
  • 2 large Large eggs, lightly beaten
  • 3-4 cups Low-sodium chicken or turkey broth
Garnish
  • 1/4 cup Fresh parsley, chopped
Optional Additions
  • 8-12 ounces Cooked crumbled breakfast sausage
  • 1/2 cup Dried cranberries
  • 1/2 cup Chopped pecans or walnuts
  • 1-2 teaspoons Fresh rosemary, chopped

Method
 

Step-by-Step
  1. Dry 12 cups of bread cubes uncovered overnight, or spread them on baking sheets and bake at 300°F for 20 to 30 minutes, stirring once or twice. The cubes should feel dry but should not be deeply browned.
  2. Melt the butter in a large skillet over medium heat. Add the onion and celery and cook for 8 to 10 minutes, until softened, then stir in the sage, poultry seasoning, thyme, salt, and pepper.
  3. Place the dried bread cubes in a large bowl and pour the butter-and-vegetable mixture over them. Toss gently, then add the beaten eggs and 3 cups of broth; add the remaining broth gradually only if needed.
  4. Lightly grease a 5- to 6-quart slow cooker and transfer the stuffing mixture inside. Leave it loosely arranged rather than packing it down tightly.
  5. Cover and cook on LOW for 3 to 4 hours, stirring once halfway through if practical. The stuffing is ready when it is hot throughout and reaches at least 165°F in the center.
  6. For a drier texture and lightly crisped top, remove the slow-cooker lid during the final 20 to 30 minutes. Sprinkle with fresh parsley before serving.

Notes

Dried bread is essential because fresh bread can create gummy stuffing. If using sausage, cook it fully first and drain excess fat. Avoid holding stuffing on WARM for extended periods; serve once it reaches 165°F.
