- Pat the wings dry, remove any remaining tips, and separate the drumettes from the flats if needed.
- Whisk the honey, low-sodium soy sauce, ketchup, garlic, ginger, and optional vinegar and sesame oil in a bowl until smooth.
- Place the wings in the slow cooker and pour the sauce over them. Toss carefully to coat.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until tender and at least 165°F internally.
- Transfer the wings to a foil-lined baking sheet, spoon or brush on some sauce, and broil for 3–5 minutes until browned and lightly caramelized.
- Garnish with sesame seeds or sliced green onions. For thicker sauce, simmer the remaining liquid in a saucepan or whisk in a slurry made with 1 teaspoon cornstarch and 1 tablespoon cold water.
Notes
Use low-sodium soy sauce because the sauce becomes more concentrated during cooking. Reserve a portion of the sauce before it touches raw chicken if you want extra sauce for serving. Slow-cooked wings are tender rather than crisp, so the brief broiler finish is recommended.
