- Place the chicken in the slow cooker in an even layer. Trim away any excess fat first, but do not cut the chicken into small pieces because larger pieces stay juicier while they cook.
- Whisk together the condensed cream of chicken soup, chicken gravy mix, low-sodium chicken broth, garlic powder, onion powder, and black pepper in a bowl. Add the optional butter or dried thyme if desired.
- Pour the gravy mixture over the chicken and cover the slow cooker. Cook on LOW for 4–6 hours or HIGH for 2–3 hours, until the thickest piece reaches 165°F/74°C.
- Shred or slice the cooked chicken and stir it into the gravy. Serve immediately over mashed potatoes, rice, or egg noodles.
Notes
Boneless chicken thighs generally stay more tender than breasts during slow cooking. Avoid cooking chicken breast substantially longer than the recommended time. For thicker gravy, mix 1 tablespoon cornstarch with 1 tablespoon cold water, stir it in during the final 15–20 minutes, and cook until thickened. Avoid lifting the lid repeatedly because each opening can significantly extend the cooking time.
